She was subsequently discovered in 1989 when she was wearing a Labatt's beer t-shirt at a football game. She was hired by Labatt's to promote their product, and soon after, she appeared in Playboy magazine.

E! network was looking for a replacement for popular host Jules Asner and found Brooke to be perfect for the role. She travelled the world extensively, profiling many popular travel destinations across the globe. Burke was replaced as host in 2002 by model Cindy Taylor.
